Ingredients
– 10 oz ribeye steak – 1/2 tsp salt – Black pepper to taste – 1 tbsp grape seed or vegetable oil For the dressing: – 2 tbsp balsamic vinegar – Pinch of garlic powder – 1/4 tsp salt – 1/4 tsp honey — sugar or any liquid sweetener (optional) – 1/4 tsp oregano – Pinch of black pepper – 1/2 tsp old fashioned or Dijon mustard – 1/4 cup olive oil For the salad: – 4 oz mixed greens – 1/2 small red onion — thinly sliced – 1/2 cup chopped tomatoes – 1/2 cup chopped cucumbers – 1/2 avocado — sliced – 2 tbsp crumbled Blue or Feta cheese — optional
In the Instant Pot combine the: onions, carrots, garlic, rinsed lentils, chicken or vegetable stock, tomato sauce, salt, pepper, smoked paprika, cumin, thyme and Bay leaf.
In a bowl combine the greens, cucumbers, tomatoes, onions, avocado and steak. Add blue cheese or feta (optional). Drizzle with dressing on top. Serve.
