Salad With Grapes And Cheese

– 6 cups mixed greens – 12 oz 180 grams Grapes - could use different varieties red and green, preferably seedless, cut in half – 3 oz Blue cheese — crumbled – 3 oz Cheddar cheese — chopped – 1/3 cup Caramelized Walnuts — or just toasted walnuts – Optional - dried cherries or cranberries Dressing: – Honey Balsamic Vinaigrette – 1/4 cup Olive oil – 2 tsp Honey – 1/4 tsp Salt or more to taste – 1/8 tsp Black pepper – 2 tbsp Balsamic vinegar

Step 1

 Place all dressing ingredients in a jar with a lid and shake until well combined. Use in the salad.

Step 2

 Use store bought caramelized walnuts, or just toasted walnuts (alternatively toast them on the stove top).

Step 3

Place the lettuce (mixed greens) in a large bowl. Add the walnuts, cheesed and grapes. Use dried cranberries or cherries (optional).

Step 4

 Drizzle the dressing and toss to combine. Serve right away.

Step 5

 Store any leftovers in an airtight container in the fridge for up to 1 day.
