Sparkling Raspberry Lemonade




– 4 oz dry pasta – 1 1/2 cup marinara sauce – 1/2 cup cottage cheese – 2 tbsp Olive oil – 1/2 tsp salt – 1/4 tsp black pepper – 1/4 tsp garlic powder – 1/2 tsp dry basil – 1/4 tsp dry oregano – 1/4 tsp hot pepper flakes — optional for topping – 1/2 cup grated Parmesan – Fresh basil for garnishing

Step 1

Cook pasta according to the directions on the package.

Step 2

 In a blender combine pasta sauce, cottage cheese, olive oil, salt, black pepper, garlic powder, basil and oregano. You may add about 1/4 to 1/3 cup of the pasta water. Blend until smooth.

Step 3

Transfer to a pan and heat over medium heat. Add the cooked pasta and toss to coat.

Step 4

Drizzle with more olive oil. You may add a few drops of lemon juice ( optional). Top with cheese, fresh basil and red pepper flakes. Serve.
