Oven Baked Pork Tenderloin

– 2 1.5 lb pork tenderloins – 1/4 cup olive oil – 3 tbsp Dijon or Whole Grain Dijon Mustard – 1 tsp salt – 1/2 tsp black pepper – 1/2 tsp garlic powder – 1/2 tsp oregano — optional – 2 tbsp balsamic vinegar

1. Preheat oven to 425 F.

2.  Line a sheet pan with aluminum foil.

3.  In a bowl, whisk together the mustard, olive oil, salt, pepper, garlic powder, oregano and balsamic vinegar.

4.  Pour the mixture over the pork and rub to coat.

5.  Place meat on the baking sheet.

6.  Add the vegetables. I used Brussel sprouts. Season them with  salt and pepper and drizzle with some olive oil on top.

7.  Bake for 20-30 minutes, until the internal temperature of the meat is 150 F. Take out of the oven, place on a cutting board and let the meat rest for 10 minutes. You can cover with foil, while resting.

8.  At this point Brussel Sprouts may be done cooking or require a few more minutes of roasting. Cook until they are crispy and golden brown.

9.  Slice the meat and serve.
