– 12 chicken drumsticks, medium size, about 3-4 oz each, skin on – ▢1/4 cup olive or vegetable oil – ▢1 tsp Dijon Mustard – ▢1-2 tsp soy sauce – ▢1 tsp lemon juice, optional – ▢1/4 tsp hot sauce, optional, I used Sriracha – ▢1 tsp salt – ▢1/2 tsp black pepper – ▢1 tsp garlic powder – ▢1 tsp onion powder – ▢1 tsp paprika, or smoked paprika

Step 1

Preheat oven to 400 F (200 C). Line a baking sheet with foil (optional). Arrange the drumsticks on the baking sheet.

Step 2

Alternatively - use a rimmed baking sheet. In a bowl combine the olive oil, Dijon Mustard, soy sauce, lemon juice, hot sauce salt, pepper garlic powder, onion powder and paprika. Stir to combine.

Step 3

Coat the chicken drumsticks with the seasoning mixture. Bake for 35-40 minutes (more or less), until the internal temperature of the chicken meat is 165-170 F.
