– 8 lamb cutlets – 1 tbsp grape seed oil – 1/2 tsp salt – 1/4 tsp black pepper – 1/2 tsp dried thyme – 1 tbsp butter

Step 1

Pat dry, then season lamb cutlets with salt, pepper and thyme. Preheat oven to 400 F.

Step 2

Heat oil in a large skillet over high heat. Add the cutlets (you may need to work in batches) and cook for 2-3 minutes per side.

Step 3

Transfer the pan to the oven and cook for 10 more minutes, or until a thermometer inserted in the middle reads 145 F or more for well done. Let the cutlets rest for 5 minutes, then serve.
