Keto  Cabbage Salad

– 10 cups cabbage — I used 1/2 green and 1/2 purple – 1 cup chopped cucumbers – 1 cup sliced radishes – 1 1/2 cups mayonnaise – 2 tablespoons sour cream — optional – 1 tsp Dijon Mustard – 1 tablespoon apple cider vinegar – 2 tsp salt — or more to taste – 1/4 tsp black pepper

Step 1

Add cabbage to a large bowl. Sprinkle 1 tsp salt and using your hands press the cabbage to soften.

Step 2

Then add in the cucumber and radish.

Step 3

 In a small bowl combine the mayo, sour cream, mustard, salt, pepper and vinegar and whisk to combine.

Step 4

 Add the dressing to the salad and stir to evenly coat .

Step 5

 Let the salad sit for 30 minutes, then serve.

Step 6

 Keep in the fridge in an air tight container for up to 2 days.
