Ingredients

– 2 tbsp butter – 1/4 cup onion – 1-2 garlic cloves — minced – 2 cups chicken or vegetable broth – 1/2 tsp salt – 1/4 tsp black pepper – 4 cups broccoli flourets – 2/3 cup heavy cream – 1 cup sharp cheddar cheese – 3 strips cooked bacon — chopped – 1/4 tsp Xantan gum

Step 1

Melt butter in a pot and pot. Add onion and cook for 2 minutes, stirring frequently until softened. Add garlic and cook for 1 more minute.

Step 2

Add broccoli, stock, salt and pepper. Bring to a boil then simmer until the broccoli is tender, for around 20 minutes.

Step 3

Mash broccoli with a potato masher of you prefer smaller pieces. You can also use an immersion blender to blend the soup.Add in the Xantan gum mixed with 1 tablespoon of warm water then stir.

Step 4

Add in the heavy cream and cheese. Serve topped with bacon.
