– boneless skinless chicken thighs  – yellow onion  – garlic  – carrot  – slat + pepper – paprika  – cumin  – thyme  – white rice – chicken stock – dill + parsley

1. Set a 6 qt Instant Pot to Sautee and heat the oil. Add the onion and garlic and cook for 2 minutes. Add the carrot and cook for 1 minute.

2. Next add the chicken thighs and cook for 4 minutes, stirring frequently, until the meat is no longer pink on the outside.

3. Add the salt, pepper, paprika and cumin, then add the rice and chicken stock. Stir to combine. Close the Instant Pot (set the valve to sealing) and cook for 10 minutes on manual high pressure with quick release. 10 of cooking will create an al dente rice, for a softer texture cook for 1 minute longer.
