– 1 lb carrots — shredded – 1/2 tsp Salt – 1/4 tsp Black Pepper – 1/8 tsp Smoked Paprika — optional – 1 tbsp Honey – 1-2 tbsp Lemon juice – 1/2 tbsp chopped Parsley — optional – 3 tbsp Extra Virgin Olive oil – 1 tsp Dijon mustard

Step 1

Whisk all ingredients for the dressing in a bowl. Grate carrots using a hand held grater or shred using a food processor.

Step 2

Drizzle the dressing on top of the carrots. Stir to combine. Let carrots absorb the dressing for at least 15 minutes, then serve.

Step 3

Store in an air-tight container in the fridge for up to 2 days. (Carrots will release liquid).
