Honey Mustard Chicken Salad

– honey – whole grain mustard – Dijon mustard – olive oil – apple cider vinegar – garlic (either garlic powder or a garlic clove) – salt – oregano (optional)

Step 1

In a bowl whisk the marinade ingredients. Use 1/2 of the marinade to marinade the chicken for up to 4 hours or at least 15 minutes.

Step 2

Grill chicken (or cook on the stove top in a pan) until golden and cooked through for 6-7 minutes per side for an internal temperature of 165 F. Alternatively cook in a skillet on the stove top.

Step 3

Let the chicken breast rest for 5 minutes, then slice.

Step 4

In a bowl combine the mixed greens, cherry tomatoes, cucumbers, onions, corn and bacon. Top with the chicken.

Step 5

Pour the marinade on top.
