Gnocchi With Creamy Tomato Sauce




– 16 oz 3 cups uncooked potato gnocchi – 2 tbsp olive oil – 2 cloves garlic — minced or pressed – 1 small head of onion – 2 tbsp tomato paste – 1 tsp honey or agave nectar – 14 oz tomato sauce – 2 oz full fat cream cheese – 1/4 tsp dried oregano – 1/4 tsp dried basil – Salt and pepper to taste – 2/3 cup grated Parmesan cheese for serving – Fresh basil for garnishing

Step 1

Prepare the pasta sauce first.

Step 2

Heat olive oil in a skillet over medium-high heat and add onion. Cook for 1 minute, then add garlic. Cook for another minute, stirring to prevent burning.

Step 3

Add the tomato paste, tomato sauce and honey, stir to combine. Cook for 3 minutes, then season with salt, pepper, oregano and basil.

Step 4

Add the cream cheese, lower the temperature. Stir until combined.

Step 5

Cook the gnocchi.

Step 6

Reserve some of the cooking water (1/2 cup), before draining.

Step 7

Combine the gnocchi with the sauce, add cheese and basil. Serve immediately or refrigerate for up to 3 days.
