– 1 English cucumber — large
– 1/2 cup red onion, cut into 1/2 rings
– 1/3 cup Kalamata olives
– 3 tbsp chopped dill
– 1/4 cup olive oil
– 1/4 tsp salt — or more to taste
– 1 tbsp apple cider vinegar — or more to taste
Add onion and olives. In a small bowl combine olive oil, apple cider vinegar, salt and dill. Pour dressing over the salad. Add more slat or vinegar to taste, if needed.
