Chocolate Oat Bran Cookies - fiber loaded, chewy and flavorful, these cookies are very easy to make and perfect for breakfast or a sweet snack.

Ingredients

– oat bran – almond flour (or hazelnut flour) – baking powder – salt – butter, coconut oil or vegan butter at room temperature (I used coconut oil) – sugar (or low carb substitute) – brown sugar (or low carb substitute) – vanilla extract – unsweetened cocoa powder – non dairy milk – chopped chocolate (dark)

Step 1

Preheat oven to 180 C (350 F).

Step 2

Line a cookie sheet with Silpat or parchment paper.

Step 3

In a bowl combine the oat bran, almond flour, salt, cocoa powder and baking powder. Stir to combine.

Step 4

In a separate bowl beat together the butter and sugar. Add in the vanilla and milk. Beat to combine.

Step 5

Slowly add the dry ingredients to the mixture.

Step 6

Stir until just combined. Add the chocolate and mix to combine.

Step 7

Scoop out 10-12 cookies and roll into balls.

Step 8

Arrange on the baking sheet.

Step 9

 Bake for 12 minutes, then let them cool for another 15 minutes, before removing from the baking sheet and transferring to a cooling rack.
