Baked Split  Chicken Breast

– 1 14-16 oz bone in skin on chicken breast – 3 tbsp olive oil — divided – 1 tbsp butter – 1/2 tsp sea salt – 1/4 tsp black pepper – 1/4 tsp thyme – 1/4 tsp garlic powder – 1/4 tsp paprika – optional for serving: – lemon juice – fresh parsley or cilantro

1. Preheat oven to 400 F.

2.  Drizzle olive oil over both sides of the chicken breast. Season with salt, pepper, paprika, garlic powder and thyme.

3.  Heat 1 tsp of olive oil in a cast iron skillet over medium heat. Add Butter.

4.  Add the chicken, skin side down. Cook for 5 minutes, without trying to move the chicken.

5.  Turn and place in the oven.

6.  Bake for 15-20 minutes, until a thermometer inserted into the thickest part of the meat, without touching the bone reads 165 F.

7.  Take out of the oven, let the meat rest for 5 -10 minutes, then slice.
