– 1 14-16 oz bone in skin on chicken breast – 3 tbsp olive oil — divided – 1 tbsp butter – 1/2 tsp sea salt – 1/4 tsp black pepper – 1/4 tsp thyme – 1/4 tsp garlic powder – 1/4 tsp paprika – optional for serving: – lemon juice – fresh parsley or cilantro

Step 1

 Preheat oven to 400 F.

Step 2

Drizzle olive oil over both sides of the chicken breast. Season with salt, pepper, paprika, garlic powder and thyme.

Step 3

 Heat 1 tsp of olive oil in a cast iron skillet over medium heat. Add Butter.

Step 4

 Add the chicken, skin side down. Cook for 5 minutes, without trying to move the chicken.

Step 5

Turn and place in the oven.

Step 6

Bake for 15-20 minutes, until a thermometer inserted into the thickest part of the meat, without touching the bone reads 165 F.

Step 7

Take out of the oven, let the meat rest for 5 -10 minutes, then slice.
