30 jumbo shrimp, peeled and deveined, rinsed and completely dried with kitchen paper ▢1/3 cup cornstarch ▢2 eggs, beaten with 1 tbsp cold water ▢1 1/2 cups breadcrumbs, could be Panko ▢1/4 tsp salt ▢1/4 tsp black pepper ▢1 tsp seafood seasoning, optional ▢1/4 tsp garlic powder, optional ▢1/4 tsp paprika, optional ▢Cooking spray

Step 1

Place the cornstarch in a shallow bowl. Beat eggs with water and place in another shallow bowl. Combine breadcrumbs and seasoning and add to a third shallow bowl.

Step 2

Using kitchen tongs, dip shrimp to coat in the cornstarch. Next dip in the eggs and last toss into the breadcrumbs.

Step 3

Arrange on a baking sheet, covered with parchment paper. Spray shrimp on top with cooking spray. Flip and spray the other side.

Step 4

Bake at 400 F for 8-12 minutes, turning once, until the shrimp is golden brown on the inside and fully cooked.
