Baked Breaded Shrimp

– 30 jumbo shrimp — peeled and deveined, rinsed and completely dried with kitchen paper – 1/3 cup cornstarch – 2 eggs — beaten with 1 tbsp cold water – 1 1/2 cups breadcrumbs — could be Panko – 1/4 tsp salt – 1/4 tsp black pepper – 1 tsp seafood seasoning — optional – 1/4 tsp garlic powder — optional – 1/4 tsp paprika — optional – Cooking spray

Step 1

Place the cornstarch in a shallow bowl.

Step 2

Beat eggs with water and place in another shallow bowl.

Step 3

Combine breadcrumbs and seasoning and add to a third shallow bowl.

Step 4

Using kitchen tongs, dip shrimp to coat in the cornstarch.

Step 5

Next dip in the eggs and last toss into the breadcrumbs.

Step 6

Arrange on a baking sheet, covered with parchment paper. Spray shrimp on top with cooking spray. Flip and spray the other side.

Step 7

Bake at 400 F for 8-12 minutes, turning once, until the shrimp is golden brown on the inside and fully cooked.
