Bacon Wrapped Chicken Skewers

Ingredients

– 1 lb boneless skinless chicken breast — cut into 1 inch cubes – 12 slices of bacon — might need more or less – 2 tbsp olive oil – 1/2 tsp salt – 1 tsp paprika — can use 1/2 tsp smoked and 1/2 tsp regular paprika – 1/4 tsp black pepper – 1/4 tsp garlic powder – 1/4 tsp onion powder – 1/4 tsp Italian seasoning – pinch of cayenne pepper

Step 1

Soak 6 wooden skewers in cold water, or use metal skewers. In a bowl combine the seasoning and olive oil. Add chicken, make sure each piece is evenly coated in seasoning and oil.

Step 2

Preheat a gas grill to medium heat. I don’t recommend grilling over high heat, because the bacon will drip and cause the flames from the grill to burn it quickly. Clean the grates and oil them.

Step 3

Line the zucchini over the baking sheet and sprinkle with parmesan on top. Bake for 15-17 minutes, until the top is golden.

Step 4

Wrap each piece of chicken in bacon and thread onto skewers. Each slice of bacon will be enough to wrap 2-3 pieces of chicken. Slightly overlap the bacon then thread onto the skewers. Each skewer should have about 5-6 pieces of bacon wrapped chicken.

Step 5

Grill skewers for 3 minutes per side on closed grill, turning once, then open the grill and continue to cook, flipping them every minute to crisp the bacon, until the chicken is cooked to 165 F (it will take about 3-5 more minutes).
