Apple Walnut  Salad

Ingredients

– 6 cups mixed greens — I used lettuce, spinach and arugula – 1 apple — of your choice - cored and thinly sliced – 1 small red onion — or shallot, diced – 1/4 cup crumbled blue cheese – 1/3 cup roasted walnuts — chopped For the Balsamic Vinaigrette Dressing: – 1/3 cup extra virgin olive oil – 3 tbsp balsamic vinegar – 1 tsp sugar — honey or maple syrup – 1 tbsp Dijon mustard – 1/4 tsp salt – 1/4 tsp black pepper – 1/4 tsp dried oregano – Pinch of garlic powder — optional

For the dressing: 1. Combine all ingredients in a jar with a lid. Shake a few times to incorporate.

2. Use in the salad.

For the salad: 1. Divide the greens between two salad bowls.

2.  Add half of the apple, cheese, onion and walnuts to each bowl.

3. Drizzle dressing on top. Serve.

If you fill a bowl with cold water and add some salt to it, then add the sliced apples and leave them in the bowl, while you are making your salad, the apples won’t brown. Simply rinse them or just add to the salad like that.
