Inspired by a popular summer salad, these Watermelon And Feta Appetizer Bites are very easy to make and have the perfect balance of sweet and savory.

Loaded with freshness and in the form of a party appetizer on a toothpick, they are a proud pleaser.

They are a lot less messier, than eating a salad.

All you need is – watermelon, feta cheese and fresh mint leaves.

You can drizzle some balsamic glaze on top, but this is totally optional.

I’ve been in love with small appetizers lately.

I call them party bites, but you really don’t need to host a party to make them.

They could be enjoyed at home, with a glass of wine or a cocktail of your choice, like for example this Watermelon Mojito.

I shared my cantaloupe prosciutto appetizer, stuffed cherry peppers and now it is time for some Watermelon And Feta Appetizer Bites.

Watermelon is one of my favorite fruits and I love it when it is in season.

I can live on watermelon for a few days.

I’m serious about it. It tastes great in a smoothie, too.

This Strawberry And Watermelon Smoothie is the perfect example.

I get very upset, when after a careful examination I pick a watermelon and when I get home and cut it – it is not as ripe and sweet as I was expecting it to be… But it happens…

You can definitely prepare your feta and watermelon in advance and then just assemble the bites, just before the party.

I love these Norpro Bamboo Party Forks from Amazon.

For garnishing, I think adding some fresh mint, makes these Watermelon And Feta Appetizer Bites festive and summery.

Drizzling Balsamic Glaze (Balsamic Vinegar Reduction) on top is optional, I can definitely enjoy them without it.

You can find it at most big supermarkets, or make it yourself.

It is super easy.

Ingredients 

  • 10 oz feta cheese, (240 grams), cut into 1x1 inch squares, 1/2 inch thick
  • 10 oz watermelon, (240 grams), cut into 1x1 inch squares, 1/2 inch thick
  • mint leaves, Optional, for garnishing
  • balsamic vinegar (balsamic glaze), Optional, for garnishing

Instructions 

  • Skewer feta and watermelon pieces onto appetizer picks.
  • Garnish with fresh mint and balsamic vinegar (optional). Serve immediately.
