Vegan Pumpkin Spice Smoothie – healthy, nutritious and easy to make, perfect for fall. Loaded with good for you ingredients that will help you stay energized.

 

I’m surprised how much I enjoyed this vegan pumpkin spice smoothie, since I’m not a pumpkin fan at all. I recently decided to start experimenting and testing some pumpkin recipes and this is one of them.

The recipe is completely vegan, unless you decide to substitute coconut milk with cow’s milk (which I don’t recommend).

This vegan pumpkin spice smoothie is rich and creamy, light and refreshing! It almost tastes like pumpkin pie, but if you don’t normally have pumpkin pie for breakfast, this smoothie is ideal for that.

Adding two of my favorite winter spices – cinnamon and ginger made this smoothie taste like holiday dessert. Ideal for a quick and filling breakfast. I sweetened it with some agave nectar , since pumpkin pure is not sweet.

I don’t recommend that you use the pumpkin pie filling in this recipe, since we are trying to create a healthy smoothie and canned pumpkin pie filling contains lots of sugar and spices.

I threw in some pumpkin seeds for extra texture, which also are a good source of omega 3 and rich in zinc. I also prefer using coconut milk in my smoothies, but almond or 2% cow’s milk can be substituted.

How to make Vegan Pumpkin Spice Smoothie

Making a smoothie is simple.

One of the most important things for the recipe is a having a powerful blender (or a food processor). Back in the US I used a Blendtec, but here in Europe I have a very powerful Philips blender.

A good blender will blend everything very well and make the smoothie creamy, smooth and airy.

Food processor will also work, if you don’t have a blender, but these are not as good for smoothies.

To make this healthy pumpkin spice smoothie : Place all in ingredients in a blender and blend until smooth.

Ingredients 

  • 1/2 cup pumpkin pure, (not pie filling)
  • 1 cup coconut milk, or almond milk
  • 1 tsp agave nectar
  • 1 tbsp pumpkin seeds
  • 1/4 tsp ground cinnamon
  • 1/16 tsp ground ginger, optional
  • 5 ice cubes
  • more pumpkin seeds for decoration
  • 1 frozen banana

Instructions 

  • Place all ingredients in a blender and blend until smooth.
  • Serve immediately.

  1. Oh yum! To be honest I’m not a huge fan of smoothies, I just prefer juices. But this is a meaty smoothie, I could have it for breakfast quite happily! Pinning!
