The Best Cucumber Salad Recipe – light, low calorie, simple to make and delicious cucumber salad made with just a few ingredients. This Bulgarian cucumber salad is perfect as a side dish, served with grilled meat, veggies or a nice cocktail.

I make cucumber salads all the time, but this is by far my favorite cucumber salad recipe. So easy to make, refreshing and customizable, it comes together in just a few minutes and is also kid friendly. I grew up eating this salad and my kids love it as well. The addition of fresh dill (highly recommended) makes this salad smell like spring.

Crunchy English cucumber, sliced into thin rounds, freshly chopped dill, Himalayan salt, olive oil and apple cider vinegar come together in the most delicious cucumber salad in the whole world!

What kind of cucumbers shall I use for this salad?

I recommend using seedless cucumbers, to achieve the same results as me, since remember, this is the best cucumber salad recipe and we want to make it with fresh, crunchy and seedless cucumbers for the most pleasant taste.

English cucumbers are ideal, but Persian cucumbers can be used as well.

If you happen to have just regular cucumbers with seeds, you can remove the seeds, by cutting the cucumber in half lengthwise and scraping off the seeds from the middle. Then use them in the salad recipe.

How to make this cucumber salad 

  1. In a bowl combine the salt, olive oil and apple cider vinegar. You can also add about 1/2 teaspoon of honey to the dressing, if you’d like.
  2. Wash your cucumber and peel (if desired, peeling the cucumber is not mandatory).
  3. Slice into very thin slices, using a sharp knife. You can use a mandolin slicer, but  I personally like to slice cucumbers with a knife.
  4. Place cucumbers in a colander over a bowl.
  5. Sprinkle some salt over the cucumbers and let it sit over them for 5 minutes.
  6. Next dry the slices between two paper towels. This is an important step so that your cucumbers don’t get soggy.ucumbers

  8. Season with salt, olive oil and apple cider vinegar. Add the dill and stir to combine.

Shall I use fresh or dried dill in cucumber salad

I’m a huge fan of dill and use it in quite a few recipes. I buy it all the time and also plant it in my small herb garden. I know fresh herbs come at a cost, but for this Best Cucumber Salad Recipe I strongly suggest that you use fresh dill.

If you don’t have any on hand, you can then use dried dill, but its smell and flavor are nowhere near the way fresh dill smells.

What other vegetables can I add to this salad

This salad is made with only cucumbers. You can also add sliced red or yellow onions or radishes.
