Taco Stuffed Avocado {Keto, Low-Carb}  – very quick and easy to make, great for an appetizer or main dish. Gluten free, made with just a few simple ingredients.

I’ve been using a lot of ground beef lately.

It is a staple in low-carb diets and cooks fast. You can also season it with seasoning of your choice and serve it the vegetables you like.

This Taco Stuffed Avocado is perfect for people, who follow the Keto diet.

Of course you can cook beef and serve it with avocado, cheese and tomatoes on the side, but the idea of avocado boats is so much fun!

I’ve also tried stuffing avocado with tuna salad and it tasted awesome!

What is stuffed avocado?

Avocado, cut in half and pitted, where the flesh is either left in or scooped out (to be used as a part of the filling) and stuffed with meat, seafood, eggs or cheese.

There are many variations of the stuffed avocado recipe like Chuy’s stuffed avocado with chicken, taco stuffed avocado, steak stuffed avocado, shrimp or crab stuffed avocado, how about tuna stuffed avocado? Another tasty variation of stuffed avocado is egg stuffed avocado, where an egg is cracked inside the avocado and baked until set. This makes the perfect low-carb breakfast.

These low-carb Taco Stuffed Avocado boats hold well and can also be served at a party.

The avocado browns prety slowly, because it is covered in stuffing.

These stuffed avocados are a healthy twist on one of my favorite foods – tacos!

Now, when I try to avoid tortillas, I can just add the meat and toppings to an avocado boat and call it a meal!

What ingredients do I need to make stuffed avocado?

To make these Taco Stuffed Avocado {Keto, Low-Carb}, you’ll need:

  • Ground beef and seasoning. You can use store-bought taco seasoning or use a mix of spices you prefer. I also added some tomato sauce to the beef and it tasted delicious.
  • toppings like cheese, sliced Jalapeno peppers, tomatoes, lettuce, cilantro, sour cream and I also used some small avocado pieces, that I scooped out of the avocados.

This Taco Stuffed Avocado {Keto, Low-Carb} is great for busy people, looking for a quick, less than 30 minute dinner option.

Fun for the whole family!

Great for a low-carb taco night.

Why scoop out some of the avocado before you fill them?

Because this way the avocado boats can hold more taco filling.

You can also mash it and make guacamole out of it, or if you are like me, just chop it and add it on top of the boats.

How to make your own taco seasoning, to use in recipes like these Taco Stuffed Avocado {Keto, Low-Carb}?

I used a mix of chili powder, onion powder, garlic powder, salt, pepper, cumin, oregano and paprika.

This taco stuffed avocado will make a nice low-carb treat for Cinco De Mayo!

How to make Healthy Taco Stuffed Avocado?

  1. Cut avocados in half, remove the pit and place cut avocados on a plate.

  2. In a large skillet cook beef for 2-3 minutes, stir frequently and crumble the beef. Drain the grease (optional, but recommended). Add the seasoning and tomato sauce. Cook for 3-4 more minutes or until cooked through.

  3. Stuff the avocado shells with the filling. Top with cheese, tomatoes, avocado (or guacamole if you decide to make), squeeze some lime juice and a add additional toppings of your choice.

Ingredients 

  • 6 large avocados, cut in half, pit removed and 2 tbsp of the inside scooped out
  • 1 lb lean ground beef
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp oregano
  • 1/4 cup tomato sauce
  • 1/3 cup shredded cheese
  • 1/4 cup chopped tomatoes
  • chopped cilantro or parsley for garnishing
  • additional toppings of your choice
  • 6 lime slices

Instructions 

  • Place cut avocados on a platter.
  • Place beef in a large skillet and cook for2-3 minutes, stir frequently and crumble the beef. Drain the grease. Add the seasoning and tomato sauce. Cook for 3-4 more minutes or until cooked through. 
  • Fill avocado shells with the filling. Top with cheese, tomatoes, avocado (or guacamole if you decide to make), squeeze some lime juice and a add additional toppings of your choice. Serve immediately.
