Time for some Sweet Potato Lentil Chili.
I did not mind the nice weather and sun at the beginning of autumn.
It is time for some cooler temperatures and comfort foods.
Speaking of comfort foods, I can’t wait to share this Sweet Potato Lentil Chili Recipe.
And speaking of chili, I love making it in the slow cooker.
It is easy, effortless and super delicious.
This is not your typical chili recipe, because there is no meat in it.
This lentil chili is completely vegetarian, but loaded with protein, vitamins and fiber.
It is a great recipe for the mines you want to cook nutritious meatless meal.
I love lentils, but for some reason rarely cook them.
In this Sweet Potato Lentil Chili Recipe I used a bag of brown lentils.
They are perfect for slow cooker soups.
When I make a lentil soup without a slow cooker, I usually use orange lentils, because they cook faster.
All you need for today’s Sweet Potato Lentil Chili Recipe are a few simple ingredients – brown lentils, sweet potatoes, onions, garlic, seasoning, vegetable stock, jalapeño peppers (optional) and diced tomatoes. I used Hunt’s® Diced Tomatoes, that I found at my local Meijer store. It is available at the aisle at Meijer.

I always have some cans available in my pantry and use them in soups, stews, sauces and much more.
The quality is outstanding and they taste great!
This Sweet Potato Lentil Chili Recipe c-rocks!
All you need to do is put the ingredients in a slow cooker and cook on low for at least 8 hours.
Perfect for busy families, who love comfort fall soups, but have minimal time to prepare fancy dinners.
This Sweet Potato Lentil Chili Recipe has turned into a family favorite.
Besides the Hunt’s® Diced Tomatoes, while at Meijer, I also got some Wish-Bone® Dressing.
(available at the dressings/sauces aisle).
I used it on some roasted mushrooms, that I prepared as a side dish for the Sweet Potato Lentil Chili.
To prepare the mushrooms, you need 1/2 pound of button mushrooms, 1/4 tsp salt, 1/8 tsp black pepper and 1/3 cup Wish-Bone® Italian Dressing.
Marinate the mushrooms in the dressing, salt and pepper mixture for 10 minutes.
Then roast in the oven at 400 F for 15-20 minutes. Serve with a side of Wish-Bone® Italian Dressing.

Sweet Potato Lentil Chili Recipe
- 1 large onion — diced
- 3 cloves garlic — pressed
- 2 sweet potatoes — about 3 cups diced
- 1 tbsp vegetable oil
- 1 can Hunt's® diced tomatoes — 14.5 oz/411 grams
- 2 1/2 cups brown lentils
- 2 tsp chili powder — or more to taste
- 2 tsp paprika
- 1/4 tsp cayenne pepper — optional
- 2 tsp cumin
- 1 tsp salt — or more to taste
- 1/4 tsp black pepper — or more to taste
- 3 cups vegetable stock
- 1 small jalapeno peppers — chopped
- fresh cilantro — fo garnishing
Add all ingredients to a crock pot.
Cook for at least 8 hours on low, or 5 hours on high. The recipe makes a huge batch, so additional cooking time may be required.
Garnish with fresh cilantro and sliced jalapeños (optional).
