Sweet Potato Kale Salad Wraps – simple to make, packed with fresh ingredients, perfect for a light vegetarian lunch. Ready in less than 5 minutes.sweet-potato-yam-kale-salad-kit-eat-smart

Did you know that March is the National Nutrition Month for 2016? There really isn’t a universal diet, that is good for everyone. What I think is important is that to follow a balanced meal plan with nutritious and delicious foods that you enjoy.

You already know that salads are “my thing”. You can find numerous salad recipes on my blog. The truth is that I eat a salad every day. Sometimes twice a day. And I don’t like to eat the same kind of salad all week long. That’s why I love experimenting by adding new types of greens, nuts, seeds and veggies to my salads.

But you don’t always need to make your salads from scratch. I have some exciting news to share with you today. And these Sweet Potato Kale Salad Wraps are delicious.

I recently tried the Eat Smart Gourmet Vegetable Salad Kits. Have you already tried them?

Seven different varieties, loaded with nutritious ingredients and conveniently packaged, so they stay fresh. I’m glad to be able to celebrate National Nutrition Month with these salads.

My husband was excited to take one of the kits to work for lunch the very next day I got them. Eat Smart products are a conveniently delicious way to eat healthy every day.

These chef-inspired salad kits offer sophisticated blends of five or more superfoods and include everything needed for a delicious salad. Perfect for those looking for innovative, convenient and healthy eating options that are easy to integrate into busy lives.

Eat Smart Roasted Yam Salad Kit is a unique blend of eight superfoods that combines roasted yams with bright dried currants and cranberries, kale, red and green cabbage, and Brussels sprouts. It’s topped with the savory nutty crunch of dried sunflower seeds, pumpkin seeds and a classic custom-made vinaigrette.

And today I’m sharing Sweet Potato Kale Salad Wraps, filled with the Eat Smart Roasted Yam salad. It only takes 5 minutes to make and tastes delicious! Perfect for a light lunch or snack.

I love roasted sweet potatoes, but they take at least 30 minutes to make. With the Eat Smart Roasted Yam Salad Kit, you not only save a lot of time, but don’t sacrifice any flavor.

Feel free to add some kind of protein, cheese or more veggies to the wrap. I personally loved the fresh and clean taste of the salad and decided to leave the wrap vegan.

You just add some salad to the middle of a tortilla or flatbread and then roll up. Cut in half and enjoy.

If you are looking for an easy weekday meal, this wrap is right for you.
