I’ve stuffed the cucumber ribbons with a smooth and creamy spread of cream cheese and smoked salmon, but you can also spread some seasoned cream cheese over the cucumber and lay a layer of thinly sliced smoked salmon over, then roll.

- Smoked salmon (Either hot smoked or cold smoked will work, since we are turning it into a spread in the food processor. Use whichever kind you choose)
- Cream Cheese
- Dijon Mustard
- salt
- black pepper
- garlic powder (optional)

You can either use milder, cold smoked salmon or lox or use smokier hot smoked salmon. In this quick smoked salmon appetizer recipe I used cold smoked wild salmon from Costco.
How to make this smoked salmon appetizer with cucumber? Directions and tips:
- Combine all ingredients for the spread in a food processor. Pulse until smooth and creamy. Mixture should be thick.
- Wash the cucumbers and do not peel. (This will keep their shape better, when cut into thin strips).
- Using a wide vegetable peeler or a thick knife (more difficult), slice the cucumber into thin, 1/8 inch ribbons lengthwise.
- Using paper towels carefully dry the cucumber slices.
- Spread cream cheese mixture over the cucumber ribbons, leaving about 1 inch at the end. Roll into roll ups.
- Serve immediately or refrigerate for 2-3 hours.
Can you make these cucumber salmon roll ups in advance?
While you can make the filling in advance, I do not recommend assembling these simple smoked salmon appetizers in advance. The cucumbers will start to release water and make the bites soggy. Cream cheese salmi filling may start to dry out (the exposed parts of it), even if it is wrapped in plastic.
