Did you have a nice holiday weekend? Mine was pretty good! I was happy to enjoy some great food and time wish my favorite people (friends and family)!

But let’s talk about breakfast/brunch now. I want to introduce you to my new favorite breakfast product: Quaker® Real Medleys® Yogurt Cups – the first shelf-stable convergence of granola, fruit and yogurt – all in a single serve cup.

Real Medleys is a delicious blend of yogurt and multigrain granola with real fruit and crunchy nuts. Filled with real ingredients, that offer quality and convenience for breakfast. There is nothing like this before!

The product is satisfying with 25 grams of whole grains and 10 grams of protein with 1/2 cup of cold skim milk.

On my recent trip to Walmart, I picked up some of their new flavors : Strawberry Almond and Raspberry Pecan. (There also is an Apple Cinnamon flavor). They are available in the “Breakfast Items” section in Walmart, by the Quaker Oatmeal. Keep in mind, that this is a new product.

Crunchy. Cool. Yum! What is cool about this product is that by adding just cold milk, it transforms into a yogurt cup, filled with oats, fruits and nuts. It only takes a few minutes to prepare and they are perfect for breakfast/brunch, snack or even dessert. Just add cold milk, stir and eat! You can also use it in yogurt parfaits, shakes or dips.

The New Quaker Real Medleys Granola And Yogurt Cups are also great for on the go. Try these, if you are looking for a fun way to get your daily dose of whole grains.

You know me – I love granola for breakfast, so I’m in love with these yogurt cups. I like to add chia seeds or flax meal to mine, also more fresh fruit or toasted coconut (chocolate chips at times). This way you can transform them into a fancy dessert and also add more fiber to your diet.

These Quaker Real Medleys Yogurt cups saved my life two weeks ago, when I had my cousins visiting for the weekend. After spending a great day downtown Chicago and partying during the night, you can probably guess we woke up late on the next morning. It was a little late for breakfast, but early for lunch.

I also did not have a lot of time to make a fancy breakfast, so I prepared some of the Strawberry Almond and Raspberry Pecan Yogurt Cups. Make sure you use COLD milk with these, do not activate with warm milk!

To the Strawberry Almond ones I added chopped almonds, chocolate chips and sweetened toasted coconut. And to the raspberry pecan Quaker Real Medleys Yogurt Cups, I added chia  seeds and fresh raspberries.

I also made some soft boiled eggs (because my family is a huge fan of these) for our late breakfast. They take under 10 minutes to prepare and I served them on a bed of arugula (the only greens I had in the fridge that morning), with some chopped bacon and some whole grain toast. I managed to prepare a simple meal in under 20 minutes. And everyone was pleased with it.

I’ve included a recipe for soft boiled eggs. Keep in mind that boiling time may vary, depending on the size, freshness and temperature of the eggs and your altitude, as well. Another problem, that might occur is peeling the eggs. Fresher eggs are more difficult to peel.

For peeling the eggs, I suggest a trick I’ve tried and works well all the time – putting a small crack through the shell of the egg, before boiling it. The crack should not extend through the membrane of the egg. Use a small curved object line a spoon to make the crack.

Quaker Real Medleys Yogurt Cups And Soft Boiled Eggs

Soft Boiled Eggs With Quaker Real Medleys

Ingredients 

  • 4 medium eggs, (if boiling more, work in batches)
  • (sauce pan and slotted spoon)

Optional for serving:

  • arugula
  • chopped bacon
  • tomatoes
  • toast

Instructions 

  • Fill a sauce pan with cold water (about half way) and bring to a boil. Decrease temperature, so the water reduces to a rapid simmer and gently transfer the eggs one by one. Cook eggs for 5-7 minutes, 5- for yolk that is very runny and 7 - for yolk that is starting to set.
  • Drain eggs and run them under cold water for 1 minute.
  • Peel the eggs (sometimes it is the hardest thing to do) and serve.
  • I served mine with whole grain toast, arugula, chopped bacon and tomatoes.

Notes

If you are cooking more than 4 eggs, you need to work in batches. Cooking time may vary, depending on the altitude, size and temperature of the eggs, type of pot used.
