This time we are cooking a different cut of lamb – the lamb loin chops.

Wonder what the difference between those two is?

The rack of lamb has a bigger amount of tender meat that the lamb loin chop.

Lamb Loin Chops- Mini T-bone steaks from the waist of the lamb.

One side has the lamb loin and the other has the fillet.

The fillet part is smaller than the loin.

These chops are great for grilling and roasting.

Rack of Lamb- lamb chops or cutlets, this is the most expensive cut of lamb meat, but super tender, flavorful and delicious.

You can either cook the whole crown or cut them into individual chops.

Perfect for grilling and roasting.

Ingredients to cook Lamb Loin Chops 

  • olive oil
  • lamb loin chops
  • salt
  • black pepper
  • garlic powder (or fresh minced garlic)
  • thyme (optional)

How to make these chops

Take out the lamb chops from the fridge and let them sit at room temperature for 20 minutes.

Preheat oven to 400 F.

Drizzle olive oil on both sides of the chops and season with salt, black pepper (optional), garlic and thyme.

Heat 1 tbsp of olive oil in a large oven safe skillet.

Add the chops and cook for 2 minutes per side, until brown.

Transfer to the oven and cook for at least 10 minutes for rare, 14 minutes for medium and 20 minutes for well done.

Remove from the oven, let the chops rest in the pan for 5 minutes, then serve.

How to tell when they are done?

Lamb loin chops taste best when cooked to medium, but please don’t overcook them, because the meat is tender and will turn chewy and dry.

I suggest that you brown the chops on both sides on the stove top and then finish cooking in the oven.

Use a probe thermometer, if you have one.

Check the temperature, 145 F is the safe temperature, that produces medium-rare lamb chops.

Looking for rare lamb loin chops?

At 125 F they will be rare, but this is not a recommended safe temperature to eat.

What temperature should be lamb cooked to ?

Cook to the desired doneness.

Most people prefer the chops medium to medium rare, others love them well done.

Cook to 145 F for medium rare, 160 F  for medium and 170 for well done.

What to serve these lamb loin chops with?

I have several side dishes to suggest. These go well with salads and potatoes.

  • Potato Salad – no mayo, but still creamy and delicious. Perfect as a side for grilled lamb, chicken or fish.

Ingredients 

  • 1/4 cup olive oil, divided
  • 8 lamb loin chops
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder, or fresh minced garlic
  • 1/2 tsp thyme, optional

Instructions 

  • Take out the lamb chops from the fridge and let them sit at room temperature for 20 minutes.
  • Preheat oven to 400 F.
  • Drizzle olive oil on both sides of the lamb chops and season with salt, black pepper (optional), garlic and thyme.
  • Heat 1 tbsp of olive oil in a large oven safe skillet.
  • Add the chops and cook for 2-3 minutes per side, until brown.
  • Transfer to the oven and cook for at least 10 minutes for rare, 15 minutes for medium and 20-22 minutes for well done.
  • Remove from the oven, let the chops rest in the pan for 5 minutes, then serve.

  3. I’ve been going to a favorite restaurant and dropping $34 on a lamb chop dish when I get the urge when I saw this cut at Costco for $7/lb. I’m making this utterly easy and excellent dish for a second time because it’s special but there’s almost no hands on or prep involved so we can have it on busy weeknights.

  5. I’m trying to remember the stuffed Lamb chops that were breaded and I think had a light tomato kinda flavor to them that my Mom used to make back in the 1950’s.
