Happy Friday! Today I have my last grilling recipe for 2017. Hard to believe, but summer is almost over. Labor Day is just days away. I’m excited, but not ready for fall! I had to share this Grilled Carrots In Foil Recipe, because it is a staple in my barbecue menu.

I love carrots and prefer them raw, to snack on or in salads like this Easy Chinese Chicken Salad Recipe or Purple Cabbage And Green Apple Salad.

The second best way to eat carrots for me is grilled or oven roasted. Grilling really enhances the sweetness and fruitiness of carrots. Makes them tender, perfect for a barbecue side dish.

Can you grill carrots without the foil? Of course you can, but you may risk to burn them on the outside and leave them under cooked.

By wrapping them in foil, you ensure even and quick cooking and no mess.

Carrots are rich in vitamin A, in the form of beta-carotene. This is where they get their bright orange color from.

They are good for your vision. Speaking of vision, I probably need to eat a lot more carrots than I do, since I spend numerous hours per day in front of the computer (both my jobs require it!).

This Grilled Carrots In Foil Recipe is a favorite from my childhood.

To season the carrots, I used a simple combination of salt, pepper, garlic, parsley (fresh or dried), olive oil and a “secret ingredient”.

Well, not so secret, because I’ve talked about it on the blog before. It is called summer savory and you can purchase it on Amazon or some major grocery stores.

Summer Savory is one of the spices used to make za’atar.

This spice is popular in Bulgarian cuisine, used in soups, stews, grilled meat and veggies. Called “chubritsa” in Bulgarian, it tastes similar to thyme to some people, but not as strong. It really doesn’t smell like thyme to me, but it is worth trying.

I used a combination of orange, yellow and purple carrots. I love the different colors, they make  dishes extra festive.

If you’d like you can only use orange carrots, not a problem.

You may find a slight difference on sweetness and flavor between orange, yellow and purple carrots. Yellow (also called golden or white) are the sweetest and least flavorful to me. Orange and purple taste very similar (to me).

Grilled Carrots In Foil Recipe

Grilled Carrots In Foil Recipe - quick recipe, made with some carrots and simple seasoning. Wrapped in aluminum foil and grilled until tender. Perfect for a side dish or to add to a salad of grain bowl.

Ingredients 

  • 4 carrots large, about 1 pound
  • 1/2 tbsp salt
  • 1/4 tbsp black pepper
  • 1 tsp parsey, dry or fresh (chopped)
  • 1 tsp summer savory seasoning
  • 2 tbsp olive oil
  • 1/2 lemon, to drizzle over the cooked carrots (optional)

Instructions 

  • Wash and peel carrots. Cut into 1/2 -inch thick rounds. Place on a bowl and add seasonings + 2 tbsp olive oil. Toss to combine.
  • Preheat gas grill to medium-high heat (450F).
  • Cut a large piece of aluminum foil and place carrots in the middle. Wrap tightly.
  • Grill carrots for 30-35 minutes, until cooked through.
  • To serve, drizzle some lemon juice over them.
