Since it is officially Spring, even though April is generally a cold month around here, I think it is time for some grilled asparagus.

Did I ever tell you that I prefer my asparagus grilled? Of course, I can have them steamed or baked, but I just love the charred outside and crunchy inside of grilled asparagus. While you do need to watch the cooking time when grilling your asparagus, this extra time is totally worth it.

Tips to make grilled asparagus:

  • For grilling – I prefer thick asparagus. It is more difficult to over cook them, when they are thick and they also absorb more flavor.
  • You can always double the amount of asparagus in the recipe and use the left overs for salads.
  • Paired with light flavorful Dijon mustard vinaigrette these asparagus taste amazing!

These are perfect for a side dish, for brunch or a family gathering.

Benefits of asparagus:

  • Asparagus are a great source of vitamins K, B2, C and also dietary fiber. I remember being scared to try them as a child, because of their weird look?! I know, that’s crazy! They’ve turned into one of my favorite vegetables since then.

What to serve grilled asparagus with:

  • I added soft boiled eggs to this dish, but they are totally optional.

Grilled Asparagus With Dijon Mustard Vinaigrette

Grilled Asparagus With Dijon Mustard Vinaigrette

Ingredients 

  • 1 pound thick asparagus, , peeled and ends trimmed
  • olive oil spray, (if concerned about using olive oil for grilled veggies, use grapeseed oil or any vegetable oil)
  • salt and pepper to taste

For the Dijon Mustard Vinaigrette:

  • 1 tbsp Dijon mustard
  • 3 tbsp Bragg’s Organic Apple Cider Vinegar
  • 1 small shallot, , chopped (or 1/2 small red onion, chopped)
  • 4 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp fresh chopped parsley

Instructions 

For the asparagus:

  • Preheat gas grill to 400 F (medium heat).
  • Spray asparagus with olive oil (other oil of your choice), season with salt and pepper. Grill asparagus for 4-5 minutes, turning once, until they are tender. Grilling time may vary, keep an eye on the grill.

For the Dijon mustard vinaigrette:

  • Combine all ingredients in a small bowl (jar). Taste and adjust the taste if needed. If the vinaigrette is too tart, you cal always add a pinch of sugar to it.

To serve:

  • Serve asparagus on a plate with the vinaigrette. Make soft boiled eggs to accompany the dish, if you’d like. You can use this recipe.
