This green salad with asparagus has a great combination of flavors, perfect for spring. Paired with vinaigrette dressing it is light and refreshing. You can enjoy this salad with your favorite dressing, but I’ve included a recipe for lemon vinaigrette.

Green Salad With Asparagus and Lemon Vinaigrette

Green Salad With Asparagus and Lemon Vinaigrette

Ingredients 

  • For the salad
  • 2 cups chopped Artisan lettuce
  • 2 medium tomatoes cut into small pieces
  • 1/4 cup crumbled feta cheese
  • 6 Kalamata olives
  • 6 (left over) cooked asparagus cut into 2 inch pieces (If you don't have left over asparagus, you can season them with salt, black pepper, olive oil and lemon juice and bake them in the oven on 400F for 5-7 minutes)
  • For the lemon vinaigrette dressing
  • 1/4 cup fresh squeezed lemon juice
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp lemon zest
  • 1/2 tsp Dijon mustard
  • 1/2 cup olive oil
  • pinch of black pepper

Instructions 

  • To prepare the dressing:
  • You can use a blender-mixing all ingredients together on a low speed and drizzling the olive oil at the end.
  • If you prefer not to use a blender-whisk all ingredients for the dressing in a bowl.
  • Refrigerate dressing, while you are preparing the salad.
  • To put the salad together:
  • In a bowl (large plate) place lettuce, tomatoes, olives and feta cheese. Add asparagus on top. Pour the desired amount of dressing and enjoy!

I made this tonight to accompany grilled Mahi Mahi.  It was so delish!  I grilled the asparagus since I was also grilling the fish but otherwise followed the recipe as written.  It was an easy recipe to follow and quick to whip up.  The vinaigrette was amazing.  I will definitely make this salad again…..probably tomorrow.
