This is pretty much the only icebox cake I make.

It is inspired by a recipe from my childhood called biscuit cake. Made with tea biscuits and homemade pudding.

You can also use store bought pudding in different flavors like vanilla, chocolate or strawberry.

Biscuit cake is very popular in Bulgaria and other Slavic countries.

Ever since I made this Easy Pudding Graham Cracker Icebox Cake with my favorite honey graham crackers and quick vanilla pudding, I instantly became a fan of “biscuit cake”.

It is quick, foolproof, simple to make, inexpensive and very delicious!

Plus, everyone around me loves it!

It feels good to be able to make a simple dessert with 3 simple ingredients. I purchased the graham crackers and pudding from Aldi, but you can get them at any other store.

The fact that it takes 10 minutes to make and requires just 3 ingredients, that are easy to find, makes this Easy Pudding Graham Cracker Icebox Cake worth trying!

Top it with chopped nuts (I used walnuts in this recipe), shaved chocolate or chocolate sprinkles.

You can also add some fruit preserves or jam between the layers (I rarely do so) and top the cake with whipped cream or even fresh fruit, right before serving.

Easy Pudding Graham Cracker Icebox Cake Recipe

Easy Pudding Graham Cracker Icebox Cake Recipe - ready in 10 minutes with just 3 easy to find and inexpensive ingredients.

Ingredients 

  • 2 packs 3.4 oz (each) instant vanilla pudding
  • 2 cups 2% milk, cold
  • 1 14.4 box graham crackers
  • 1/2 cup chopped nuts for garnishing, can use shaved chocolate or chocolate sprinkles

Instructions 

  • In a large bowl, whisk together the pudding and milk until combined. Set aside. 
  • I used a 9x13 inch Pyrex dish for the cake. You can use a baking dish with the same dimensions. Line the bottom with graham crackers. Add about 1/3 of the pudding and spread. Add another layer of graham crackers over the pudding, then add 1/3 of the pudding on top. Spread to coat. Add a third layer of crackers over the pudding and top with the remaining pudding. Cover and refrigerate for 1 hour. 
  • Top with nuts (or sprinkles or shaved chocolate). Cut into squares and serve.

Keep in the fridge for up to 3 days.

  1. Use vanilla and chocolate puddings. Use small slices
    of freestone peaches, Marachino cherries cut in half
    on top.
