This is pretty much the only icebox cake I make.
It is inspired by a recipe from my childhood called biscuit cake. Made with tea biscuits and homemade pudding.
You can also use store bought pudding in different flavors like vanilla, chocolate or strawberry.
Biscuit cake is very popular in Bulgaria and other Slavic countries.
Ever since I made this Easy Pudding Graham Cracker Icebox Cake with my favorite honey graham crackers and quick vanilla pudding, I instantly became a fan of “biscuit cake”.
It is quick, foolproof, simple to make, inexpensive and very delicious!

Plus, everyone around me loves it!
It feels good to be able to make a simple dessert with 3 simple ingredients. I purchased the graham crackers and pudding from Aldi, but you can get them at any other store.
The fact that it takes 10 minutes to make and requires just 3 ingredients, that are easy to find, makes this Easy Pudding Graham Cracker Icebox Cake worth trying!

Top it with chopped nuts (I used walnuts in this recipe), shaved chocolate or chocolate sprinkles.
You can also add some fruit preserves or jam between the layers (I rarely do so) and top the cake with whipped cream or even fresh fruit, right before serving.
