- apple cider vinegar

What mushrooms work best for marinating?
I usually use button white mushrooms for this recipe.
I recently tried it with baby Bella mushrooms, and even though they have a slightly earthier flavor than button white, I really loved how they turned out.
I’ve updated the recipe photos and added a video and you’ll see that I’ve used baby Bella mushrooms.
The simple marinade also works for portobello mushrooms. You can cut them into cubes.

For the mushrooms

Wash mushrooms and dry with paper towel.

Sautรฉ mushrooms in 1 tbsp of the oil and pinch of salt for 5-7 minutes, until they release liquid and almost half of it has evaporated. Let them cool for 5 minutes.

You can also grill the mushrooms, instead of cooking them on the stove top.
For the marinade

In a small bowl combine all the ingredients for the marinade.

Place mushrooms in a bowl and pour marinade on top. Let them sit for at least 5 minutes, then serve.
How long should mushrooms stay in the marinade before they are ready to serve?
At least 5 minutes.
Keep in mind that these mushrooms benefit the most from the marinade if it is added to them, while they are still warm.
The more mushrooms stay in the marinade, the tastier they get.
How to store these easy marinated mushrooms? How long do they last? Can you freeze them?
These mushrooms could be made in advance and stored in the fridge for up to 10 days.
I like to have them ready around the holidays.

- 1/2 tsp dried oregano

OMG! I will never have to “treat” myself to $10/lb mushrooms from the deli. My mushrooms were larger, more like stuffing size. So I trimmed the end of the stem and quartered them. Followed instructions. Used fresh cilantro instead. Used honey. Was so delicious! Will probably be sneaking into the fridge tonight! Planning on making a big batch!
