I just love buying versatile products like this. After making these taco cups, I also enjoyed the salsa with some chips.

To make the taco cups I used ground turkey that I seasoned with homemade taco seasoning. If you are not a huge fan of turkey, you can use ground chicken instead.

I cooked the turkey with the seasoning on the stove top until no longer pink.

I used a round cookie cutter to cut out 3 1/2-inch rounds from flour tortillas, which I then placed  in a greased muffin tin. Then I topped with about 1 tbsp ground turkey and 1 tbsp grated cheese and baked in the oven for 10 minutes, until the cheese is melted and the tortillas are crispy.

Then let the cups cool a little, carefully remove from the tin and top with chopped tomatoes (you can skip these, if you decide to use PaceĀ® Picante Sauce), avocado, sour cream and PaceĀ® Salsa Verde.

These mini muffin tin taco cups are loaded with southwest flavors and very tasty.

Crunchy Taco Cups With Tortillas, Turkey And PaceĀ® Salsa Verde - very quick and easy to make, with amazing flavors, these mini bites are perfect for a Game Day party appetizer.

Ingredients 

For the taco cups:

  • 12 12-inch flour tortillas
  • 1 cup grated cheddar or Mexican blend cheese
  • 1 avocado, large, cut into small cubes
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 3/4 cup PaceĀ® Salsa Verde

For the turkey (can use ground chicken instead):

  • 1 tbsp olive oil
  • 1 lb ground turkey breast
  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp oregano
  • 1/2 tsp paprika
  • 1 tbsp ground cumin
  • 1 tsp sea salt

Instructions 

For the turkey (can use ground chicken instead):

  • Combine all ingredients for the seasoning in a small bowl.
  • Heat olive oil in a skillet over medium-high heat.
  • Add ground turkey and seasoning. Using a wooden spoon or a spatula break meat into large and then small pieces. Cook for 5-7 minutes, until cooked through.

For the taco cups:

  • Preheat oven to 350F. 
    Spray a muffin tin with cooking spray.
  • Using a 3 1/2-inc or 4-inch round cookie cutter, cut out 24 rounds from the tortillas (2 rounds per tortilla).
    Place rounds in the muffin cavities and press own.
  • Top with 1 tbsp ground turkey and 1 tbsp grated cheese.
    Bake for 10 minutes, until cheese is melted.
    Remove from the oven and let them cool for 5 minutes.
  • Using a fork, carefully remove cups from the muffin tin. Place on a plate or party platter.
    Top with copped avocado, tomatoes, sour cream and PaceĀ® Salsa Verde
