These Air Fryer baby potatoes are just great for breakfast, lunch and dinner. Kid friendly and quick and easy to make.

The hardest part is finding the right potatoes. Most grocery stores in the USA carry small/baby potatoes, that are often called “new potatoes”.

But, new Potatoes is a term for any variety of potato that has been harvested before it has reached maturity.

These potatoes are still good to eat.

So you may notice that there are “new” potatoes from yellow, red and even purple varieties or even bags with “potato medley”, which include different varieties of mini potatoes.

When a potato is harvested they have thin skins. They need time to cure and toughen up. This way, they can be stored for a long time.

So there is a difference between freshly dug baby potatoes, that have thin skins and will usually cook faster and just small potatoes with thicker (tight) skins, that are not freshly harvested, but just small in size. These potatoes will take slightly longer time to cook. Keep that in mind.

Since I come from Europe, I can not resist mentioning my grandma’s baby potatoes, just washed and lightly scraped with a knife (or a spoon), thrown in hot oil and fried until fully cooked and crispy. Seasoned with salt and pepper, sometimes served with chopped fresh dill or (and) parsley. No par boiling or additional preparation needed. Just delicious homemade potatoes. They came straight out of the garden. Do I mention, that our hands used to turn brown, while cleaning these?

These Air Fryer Small Potatoes remind me of the potatoes from my childhood and I’ve been making them pretty often lately.

Ingredients:

Type of potatoes:

Small “new” yellow potatoes,  that need to be washed and scraped, but not peeled.

Use either fresh “out of the garden” potatoes with very thin skins, or store bought mini potatoes with thicker skin.

If potatoes are more than 1/2 inch in diameter, I suggest that you cut them in half, or into pieces with equal size, so they cook evenly and at the same time. You may leave some potatoes whole and cut some in half (quarter).

Seasoning

The seasoning I use for air fried baby potatoes is usually :

  • salt
  • black pepper
  • paprika (ot smoked paprika)
  • garlic powder
  • Optional: oregano or dried dill

Use any seasoning of your choice, like Italian, BBQ or Taco seasoning.

Oil

For my Air Fryer recipes, i usually use grapeseed oil (because if its high smoke point – 420 F), but vegetable, sunflower or olive oil can be used. Just drizzle the potatoes with a little bit of oil, before frying.

How to make baby potatoes in an Air Fryer?

Do you parboil the potatoes?

You could, but most Air Fryers are powerful enough to be able to cook potatoes this size, without pre-cooking them. If you decide to parboil the potatoes. Then reduce cooking time with 5 minutes (it may vary).

How long to cook for?

Make sure the potatoes are in a single layer in the Air Fryer basket for proper cooking.

Air fry small new potatoes at 400 F (200 C) for 15 minutes, shaking 2-3 times, while cooking.

Check for doneness, cook for additional 2-3 minutes, if needed.

Tips:

  • Choose potatoes with thin skins (if possible) and equal size, to ensure they cook evenly.
  • Use a little bit of oil to make potatoes moist and crispy.
  • Cook potatoes in batches (if needed) to ensure they cook and brown evenly.
  • Store in an airtight container, in the fridge for up to 3 days. Reheat in the microwave or in the Air Fryer for 1-3 minutes.A cooked small potato on a fork over a bowl with dipping sauce

What to serve these easy Air Fryer Baby Potatoes With?

The right question is what do small potatoes go well with?

You can just serve them with your favorite dipping sauce, like ketchup, chipotle mayo or honey mustard, these can be added to bowls, salads or served with other grilled/air fried veggies or meat. Air Fryer small potatoes go well with fish, like this Easy Baked Halibut, Easy Salmon in The Air Fryer or Broiled Shrimp. Serve them with Filet Mignon or Air Fryer Chicken Breast for meat lovers.
