This dish is simple to make, requires some staple ingredients and is perfect to serve at a holiday dinner with the family.

Speaking of holidays, it is already mid November and I can’t believe how close to Thanksgiving and Christmas we are.

On my recent trip to the grocery store I got some La Morena® Chipotle Peppers in Adobo, they are located in the Hispanic aisle.

WHAT INGREDIENTS DO I NEED TO MAKE THIS Chipotle Pork Tenderloin?

  • pork tenderloin
  • adobo sauce (from a can of chipotle peppers in adobo sauce)
  • garlic
  • orange juice (lemon juice can be used, but orange is recommended)
  • lime juice
  • apple cider vinegar
  • cumin
  • oregano
  • salt
  • pepper

HOW TO MAKE CHIPOTLE MARINADE?

The chipotle marinade that I used on this chipotle pork tenderloin is full of flavor, which makes it perfect for also pork chops, poultry or fish.

The marinade is pretty simple and the hero ingredient here to boost the taste and flavor is a can of chipotle peppers in adobo sauce. Here in the USA I get La Morena Brand at the grocery store.

If you are having difficulty finding these peppers, make sure you check an ethnic store and ask.

The marinate is made with just a few ingredients:

  • chipotle peppers in adobo sauce
  • adobo sauce
  • orange juice – tenderizes the meat and adds sweetness and citrusy flavor
  • lime juice – it also tenderizes and adds a boost of flavor
  • apple cider vinegar
  • salt and pepper
  • cumin – goes well with pork for an authentic Mexican flavor
  • oregano – adds freshness, but definitely leave it out if you are not a fan of the herb

Combine all ingredients for the marinade in a blender and blend until smooth to distribute the flavors evenly.

Marinate the pork tenderloin with the mixture for at least 30 minutes to up to 6 hours. Do not marinate longer. The presence of acids from the juices will tenderize the meat but may also damage it and the meat becomes mealy. Same goes for marinades made with pineapple juice.

WHAT IS THE BEST WAY TO COOK PORK TENDERLOIN?

There are a few different ways to cook pork tenderloin and produce tender juicy meat on the inside and crispy crust.

What is pork tenderloin to begin with?

Pork tenderloin is a long thin cut of pork, also referred to as “pork fillet”.

It is muscle meat, very lean and the most tender meat in the animal. It can easily be overcooked, but it also takes great on seasonings and marinade.
You can find packaged, pre-marinated pork tenderloin in most supermarkets.

I usually purchase mine from my local butcher or at Costco (great price).

Pork tenderloin can be:

  • cooked in the oven
  • on the stove top + finished in the oven
  • grilled

For today’s Chipotle Pork Tenderloin recipe, I chose to grill the pork, to add some extra charr and smokiness to enhance the Mexican flavor.

Pork tenderloin usually cooks fast at higher temperatures.

To cook on the grill:

Cook at 450-500 F for 15-25 minutes, turning 3-4 times until the internal temperature of the meat reaches 145 F for medium-rare.

Can cooked pork tenderloin be pink?

Yes, actually pork tenderloin is one of the cuts of pork, where the cooked meat to medium may still look pink on the inside but be perfectly safe to eat.

HOW TO MAKE THIS CHIPOTLE PORK TENDERLOIN?

  1. In a saucepan combine all ingredients for the marinade. Bring to a boil and cook over medium heat for 5 minutes.
  2. Puree marinade until smooth.
  3. Place pork tenderloin in a zip lock bag and pour the marinade on top. Make sure the meat is evenly coated in marinade. Refrigerate for at least 30 minutes to up to 2 hours.
  4. Preheat a gas grill to medium-high heat.
  5. Cook meat for about 4 minutes per side (4 sides), until cooked through. Alternatively bake in the oven at 450 F for 12-20 minutes, until the internal temperature reaches 145 F.
  6. Let it stand for 5 minutes, before slicing and serving.

You may end up with some leftover pork tenderloin, depending on how much of it you cook. To reheat leftover pork tenderloin, preheat the oven to 350 F and warm up the meat, wrapped in foil for 20 minutes.

CHIPOTLE PORK TENDERLOIN AND MEXICAN RICE RECIPE

Chipotle Pork Tenderloin And Mexican Rice Recipe With La Morena®

Ingredients 

FOR THE PORK:

  • 2 Chipotle chies in adobo
  • 2 tbsp adobo sauce
  • 3 garlic cloves, , pressed
  • 1/4 cup orange juice
  • juice from 1 lime
  • 1 tbsp apple cider vinegar
  • 1/2 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 1/2 lb pork tenderloin

FOR THE RICE:

  • 1 cup quick cooking brown rice
  • 2 tbsp vegetable oil
  • 1 garlic clove, , pressed
  • 1/2 small chopped onion
  • 1/2 cup tomato sauce
  • 1/2 tbsp ground cumin
  • salt to taste
  • 1 tbsp chopped cilantro
  • 2 cups chicken broth

Instructions 

FOR THE PORK TENDERLOIN:

  • In a small saucepan combine all ingredients for the marinade. Bring to a boil and cook over medium heat for 5 minutes.
  • Transfer marinade to a blender and puree until smooth.
  • Place pork tenderloin in a zip lock bag and pour the marinade on top. Make sure the meat is evenly coated in marinade. Refrigerate for 2 hours.
  • Preheat a gas grill to medium-high heat.
  • Cook meat for about 4 minutes per side (4 sides), until cooked through.
  • Let it stand for 5 minutes, before slicing and serving.

FOR THE RICE:

  • In a large saucepan, heat oil and add onion and garlic. Cook for 2 minutes, then add rice. Cook the rice for 2 minutes, stirring frequently, making sure it does not burn.
  • Add cumin, tomato sauce and chicken stock. Bring to a boil. Reduce heat to medium and cover.
  • Cook for 10-15 minutes, until rice is cooked.
  • Fluff with fork. Season with salt. Add fresh cilantro on top.
