I do like mac & cheese, but I didn’t have the habit of making it as often as I’d like. Now with a toddler running around and a busy lifestyle I make macaroni and cheese pretty often.

While you can make it following the directions on the package, you can also use it in easy recipes like this chili macaroni and cheese casserole.

This really is a million dollar mac & cheese casserole recipe, that you shouldn’t miss out on. It is so good, made with a box of Modern Table’s Sharp Cheddar Mac & Cheese, ground beef, canned tomatoes, taco seasoning and cheese.

You cave the option to add other veggies (like mushrooms, beans or corn) to the dish, but I kept is simple.

What ingredients do you need to make this mac and cheese casserole recipe ?

  • Modern Table Sharp Cheddar Mac & Cheese
  • ground beef
  • taco seasoning – I used homemade, see recipe card
  • canned tomatoes
  • cheese – either mozzarella or a blend of Mexican cheeses
  • cilantro (optional)
  • lime wedges (optional)

How to make this easy mac and cheese casserole:

Making this mac & cheese casserole is pretty easy!

  1. Season ground beef with salt, pepper, cumin, chili powder, onion, garlic and oregano. Heat oil in a large skillet. Crumble ground beef into the skillet. Cook and stir constantly until browned for 7 minutes.

  2. Add tomatoes and cheese packets from the Modern Table Mac and Cheese box. (Add other vegetables or jalapeños if you are using any. I did not).Stir.

For the pasta:
  1. Bring 4 quarts of water to a boil. Add pasta and cook for 5 minutes. Drain. Add to the beef and tomatoes.

  2. Preheat oven to 400 F.

  3. Add cooked pasta to the skillet with beef. Stir to incorporate. Sprinkle with cheese on tops.

  4. Bake for 10 minutes until the cheese is bubbly.

  5. Serve.

Ingredients 

  • 2 boxes Modern Table Sharp Cheddar Mac & Cheese
  • 1 tbsp oil
  • 1/4 cup heavy cream
  • 1 lb ground beef
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 can diced tomatoes, 15 oz
  • 1/4 cup canned jalapeños , (optional, to add more heat)
  • 1 1/2 cup shredded Mexican cheese, or mozzarella

Instructions 

  • Season ground beef with salt, pepper, cumin, chili powder, onion, garlic and oregano. Heat oil in a large skillet. Crumble ground beef into the skillet. Cook and stir constantly until browned for 7 minutes.
