I’ve been a little busy lately. Saying that,  I don’t usually eat right when I get hungry. This means I need a snack like these Chili Lime Zucchini Chips Recipe {Oven Baked}.

I never gave up the idea of making homemade, healthier snacks. Like this zucchini chips. Less calories, great crunch and balanced flavors, I can’t ask for more! Just to warn you, these are extremely addictive!

Thinly sliced zucchini rounds, seasoned with chili powder, lime juice and olive oil and baked (dried) in the oven until lightly crispy.

This is also a snack I would make for a football party!

If you are not a fan of the citrusy and aromatic chili lime combination, you can definitely omit the chili lime seasoning and use just salt.

Chili-Lime-Zucchini-Chips-Recipe-Oven Baked

I used a mandolin slicer to keep the zucchini the same thickness. Also, this chips requires some patience to bake. Try to fit as many baking trays as you can in your oven.

Pack this zucchini chips in a zip lock bag and take is with you, so you don’t need to worry next time you need a snack.

CHILI LIME ZUCCHINI CHIPS RECIPE {OVEN BAKED}

Chili Lime Zucchini Chips Recipe {Oven Baked} - light and healthier delicious snack. Perfect for football season.

Cook: 1 hour 30 minutes
Total: 1 hour 45 minutes
Servings: 4

Ingredients 

  • 4 zucchini, , sliced into 1/8 to 1/4 inch rounds
  • olive oil spray
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • juice from 2 limes
  • 1 1/2 tsp chili powder

Instructions 

  • Preheat oven to 275 F.
  • Line 3-4 baking sheets with parchment paper. Spray with olive oil spray
  • In a bowl, combine zucchini, olive oil. salt, lime juice and chili powder. Toss to make sure all slices are evenly coated in the seasoning.
  • Line zucchini slices in a single layer, very close to each other, fit as many as you can on the sheet.
  • Bake for 1 - 1 1/2 hours, until dried and golden. Keep and eye on them while baking, to make sure they do not burn. If there are any soft slices left, let them bake for some more time, after removing the crispy ones.
  • Let zucchini chips dry on a paper towel.
  • Store in an air-tight container for up to a week.
