Cheesy Cauliflower Patties Recipe {Baked} – easy to make and fun to eat, these mini cauliflower and mozzarella patties are great for both kids and adults.

I made these Cheesy Cauliflower Patties for my family a while back.

I came up with the idea, while trying to use up a head of cauliflower I had sitting around in my fridge.

My little guy loves veggies, but he won’t have the same thing, unless it has been at least a week since last time.

So I try to alternate different vegetables for his meals, like potatoes, Brussels sprouts, broccoli, sweet potatoes, zucchini, collard greens and cauliflower.

There are some other vegetables, but the ones mentioned are what I most often cook.

I wanted to make mini bites (or patties) so he can feed himself.

These Cheesy Cauliflower Patties turned out awesome!

So quick and simple to make, with a surprise on the inside. A cheesy surprise!

This Cheesy Cauliflower Patties Recipe {Baked} makes the perfect party appetizer.

Loaded with flavor, crunchy on the outside, soft and cheesy on the inside, these refrigerate and freeze very well. They are a great addition to your meal prep list.

Can you fry these Cheesy Cauliflower Patties instead of bake them?

Yes, but I personally prefer the baked version.

It tastes so much better and it is healthier!

Also mess free and using the oven in recipes like this prevents the overpowering fried flavor.

Why cook with cauliflower?

I love cauliflower and cook it at least once a week.

It is one of my favorite vegetables, low calorie and low carb, loaded with vitamins C, K and protein.

The ingredients needed for these Cheesy Cauliflower Patties Recipe {Baked} are :

  • steamed cauliflower
  • eggs
  • garlic powder
  • Panko breadcrumbs – these work best, because fo their texture
  • Parmesan
  • parsley
  • salt and pepper

You’ll also need some mozzarella cheese, about an ounce or 2, to add to the inside of the patties. Make sure you cut it into very small cubes.

How to make cheesy cauliflower patties?

  • Preheat oven to 400 F.
  • Line a baking sheet with Silpat (or aluminum foil).
  • Cut cauliflower into small florets and steam until tender. (Or cook in boiling water for 10-12 minutes).
  • Drain and squeeze out as much water as you can. Place in a bowl. Mash with a fork or a potato masher.
  • Add he eggs, Parmesan, bread crumbs, garlic, salt, pepper and parsley. Stir to combine. If the mixture appears too runny, add more breadcrumbs.
  • If the mixture is too dry add more whisked egg.
  • Using a small cookies scoop, form patties.
  • Add a small cube of mozzarella to the inside.
  • Place on the baking sheet.
  • Bake for about 10 minutes per side (until golden), carefully turning once.

I baked mine on a Silpat mat, which is non stick, but if you decide to use aluminum foil to cover the baking sheet, you’ll need to spray it with cooking spray.

Can you pan-fry cauliflower patties?

While I always prefer to bake patties like these, you can also fry them on the stove top for 2-3 minutes per side, until golden.

Pan frying is way too messy for me, plus that smell…

I rarely pan fry foods.

What temperature should you bake these Cheesy Cauliflower Patties at?

  • 400 F works perfect!

How long should you bake these Cheesy Cauliflower Patties?

  • Ideally these cook perfectly for 20 minutes total, 10 minutes per side. Cooking time may vary, depending on the oven, pans, pan lining and moisture of the ingredients.

Ingredients 

  • 1 lbs cauliflower, steamed, drained
  • 1/2 tsp garlic powder
  • 2/3 cup Panko breadcrumbs, you need anywhere between 1/2 cup and 1 cup
  • 1/2 cup Parmesan cheese
  • 1 tbsp chopped parsley, optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 oz Mozzarella cheese, cut into 16 cubes
  • cooking spray
  • 2 eggs
