Happy Monday guys! How was your weekend? Hibiscus Ice Pops anyone?
Mine was nice and quiet! My husband was out of town for work. I had planned to do so many things around the house and was only able to finish just a third of that I wanted.
Well, this happens to me all the time, because my “to do” lists are extremely long!
What I’m happy about is that I made these Blueberry Watermelon Hibiscus Ice pops.

Growing up I was never a huge fan of ice cream, but I did love popsicles. Especially the fruity kind. I sometimes make creamy ice pops, but the icy, sweet and fruity ones, made with juice are my favorite.
These are the perfect homemade snack for a hot summer day. I’ll definitely make them again!
In these pops I used watermelon juice, fresh blueberries, and hibiscus tea.

I make sure I always have watermelon at home during summer. It is one of my favorite seasonal fruits and my dog loves it, too. I’ve found that it tastes great when frozen, like in these popsicles.
I like to make my own tea with dried hibiscus flowers, rather than using tea bags. It has more intense flavor and color. I used to love hot hibiscus tea, but recently started making iced tea with it and it tastes refreshing! It is rich in Vitamin C, minerals and antioxidants.

We are going through about 2 watermelons per week, we love it so much. And my 2 year old granddaughter is on a kick where all she wants to eat are blueberries. These are perfect for us. They look so refreshing!

Frozen watermelon is the BEST. I had no idea dogs would be into it, too! And as for those long to-do lists…do NOT get me started. So tough to get to everything!
