Hey guys!

I haven’t shared a cocktail recipe in a while. I like to enjoy a nice and light cocktail once in a while, but I haven’t had any this year, because of my pregnancy. This doesn’t mean I haven’t made any. Every time e have friends or family over, I like to offer a cocktail. Most cocktails I make are so simple, so I enjoy making them.

I know it is time for pumpkin/apple/turkey recipes, but I really wanted to share this! You can definitely make it year round.

I used to like daiquiris when I was younger. Particularly strawberry daiquiri. It was like a mini dessert to me. Pineapple is a great option, too! Now I like it better than the strawberry one. But you guys know my heart belongs to mojitos!

 

Pineapple Daiquiri Recipe

When I made these for my girlfriends a few weeks back, I made one without alcohol for myself. It was creamy, a little frothy and delicious! Adding rum, of course makes the drink complete.

This Pineapple Daiquiri is the perfect drink for a hot summer/fall day at the beach or a relaxing evening at home.

And as I mentioned this is super simple to make with just a few ingredients, you might already have. Put everything in a blender, blend, pour into glasses and enjoy a sip!

PINEAPPLE DAIQUIRI

Ingredients 

  • 1/4 cup simple syrup
  • 2 cups chopped pineapple
  • 1 1/2 cups ice
  • juice from 2 limes
  • 1/3 cup coconut cream [6]

Instructions 

  • Place all ingredients in a blender and blend until smooth and frothy.
  • Garnish with a slice of lime and a slice of pineapple.
