I’ve been planning to make potato salad for the weekend and when I saw these colorful potato medley in the store I thought they’ll be perfect for my project!
This colorful potato salad is perfect for the summer, for party or a family picnic.

Ingredients
- 1 bag, (1-2lb) tri-colored potatoes cut in half
- 1/2 cup mayo
- 1 tbsp Dijon mustard
- 1/2 cup green onion
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp basil
- 1/8 tsp paprika
- 1 tbsp chopped parsley
- salt to taste
- 1 tbsp lemon juice
Instructions
- Set a pot with water at a rolling boil. Add potatoes and cook them for 20 minutes.
- When they are ready , drain hot water and add cold water to stop the cooking process.
- In a small bowl mix together mayo and mustard.
- In a large bowl add potatoes and mayo/mustard combo. Mix well.
- Add spices, green onion and parsley.
- Carefully mix until each potato is covered with dressing.
- Add lemon juice and salt to taste.
- You can add some more green onions and parsley for decoration.
