Arugula Beet Tuna Salad Recipe

Salad is my “go to” lunch meal when I need something quick and filling and I’m short on time.

But is has been a while since last time I made a green salad with canned white albacore tuna. I usually use this fish for a creamy tuna salad with mayo (Greek yogurt), celery and grapes. The truth is that I prefer canned tuna is a green salad. The combination of fresh veggies and tuna is always a winner.

In this salad I used beets (a great source of Vitamin C and fiber), shredded carrots (rich in Beta Carotene), arugula (antioxidants and vitamins) and the most important ingredient, that makes the salad unique – Wild Selections® Solid White Albacore Tuna in Olive Oil.

The result was so delicious! I had this salad three days in a row, this is how much I loved it. This tuna tastes so good!

The crisp and peppery arugula goes very well with the fish.

I also used fresh grated carrot for extra sweetness and grated beets (earthy flavor).

I made a light dressing with olive oil, leomon juice, vinegar, salt, pepper and some honey.

Such a simple salad with lots of great flavors and beautiful colors. It comes together in under 10 minutes. Save time making your meals and enjoy the day. I even used store bought pre-cooked beets to save time. And of course canned tuna, which is very convenient.

ARUGULA TUNA BEET SALAD

Arugula Tuna Beet Salad Recipe - a simple combination of flavors and textures come in this nutritious and delicious salad. Packed with arugula, carrots, beets and tuna. Perfect for a quick lunch of light dinner.

Ingredients 

FOR THE SALAD:

  • 4 cups arugula
  • 1 large carrot, , grated (1/2 cup)
  • 2 small beets, , grated (3/4 cup)
  • 1 can, (5 oz) Wild Selections® Solid White Albacore Tuna in Olive Oil

FOR THE DRESSING:

  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 2 tsp apple cider vinegar
  • 1 /2 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions 

FOR THE DRESSING:

  • Place all ingredients in a small jar and close with a lid. Shake well.

FOR THE SALAD:

  • Divide all ingredients equally between two salad bowls. Pour dressing on top of each salad.
  • Serve.
